About Kippers

Kippering — the process of cold-smoking split herring — was developed in the 19th century, with the fishing town of Craster in Northumberland and the Isle of Man particularly famous for their kippers. The herring was once so plentiful in the North Sea that it formed the backbone of British fishing industry and working-class diet. John Woodger of Seahouses, Northumberland, is often credited with inventing the kipper in 1843. Kippers featured prominently on Victorian and Edwardian breakfast tables and remained popular through the mid-20th century. While their everyday consumption has declined, they retain strong nostalgia value.
